Q: Do I have to use parchment paper to line the baking pan?
Since protein cake tends to stick to the pan more than traditional cake, we suggest using parchment paper for best results.
Q: Is non-stick cooking spray necessary for cupcakes and muffins?
Since protein cake tends to stick to the paper liners more than traditional cake, we suggest using non-stick cooking spray for best results.
Q: What other substitutions for oil do you suggest?
Any fruit or vegetable puree should work! Mashed banana, pureed pumpkin, and pureed zucchini are also great choices.
Q: Can I use an egg replacement like Egg Beaters to replace the whole eggs?
Since Egg Beaters is essentially egg whites, we recommend following the egg white replacement method when using egg replacers, i.e. 6 tablespoons egg replacer + 6 tablespoons oil or applesauce + 2/3 cup water to prepare the full package of mix.
Q: Will non-fat Greek yogurt work to replace the oil?
Yes, Greek yogurt with any fat percentage will work.
Q: Can I substitute melted butter for the oil?
Yes, but measure the butter before melting.
Q: Is this cake mix available in stores/ on Amazon?

Q: Can I microwave a full cake?
We recommend only microwaving one or two portions. Make sure the cake batter does not fill the container more than halfway. Microwaving large cakes will likely result in cakes that are distorted in shape and not evenly baked.
Q: What is erythritol?
Erythritol is a natural sugar alternative with only 0.2 calories per gram. It is a sugar alcohol that is generally easier on the stomach than most other sugar alcohols, and it does not raise blood sugar levels.
Q: What is inulin?
Inulin is a natural prebiotic fiber that is extracted from vegetables. The inulin we use is extracted from chicory root.
Q: What is monkfruit?
Monkfruit is a small sub-tropical melon found in part of Asia. Monkfruit extract is a natural sugar substitute that does not raise blood sugar levels or cause gastric distress.
Q: What is in the “natural flavor”?
The natural flavor in our Classic Yellow Cake Mix is a vegan product made with vanilla extract and natural vanillin.
Q: Where can I buy an oven thermometer?
Oven thermometers can be purchased online at Amazon.com or locally at major retail outlets like Target and Walmart. Kitchen supply stores should also carry oven thermometers.
Q: Can I use all-purpose wheat flour for the crumble topping in the Blueberry Muffins recipe?
Yes, but you would need to double the butter in the recipe for the crumble to hold together.
Q: Can I use frozen blueberries in the Blueberry Muffins recipe?
Yes, but you may need to increase your bake time to account for the change.

Lily’s Chocolate makes a popular product with stevia and erythritol, and they can be found on Amazon.com or in most health food stores. Whole Foods makes their own under the 365 brand, as well. Choc Zero and Lakanto make chocolate chips with monkfruit sweetener, and these are also good options. We suggest staying away from products with maltitol or allulose, as they often cause gastric distress.
Q: What is Neufchâtel?
Neufchâtel is similar to cream cheese, and has 1/3 less fat than cream cheese. You will find it next to cream cheese in the supermarket.
Q: Where can I find confectioners erythritol?
Swerve makes a popular product, and you can find that on Amazon.com, in large retail outlets like Target and Walmart, and in most health food stores.
Q: Why do you recommend alcohol-free vanilla extract for the frosting recipes?
Unless you are using a high-quality bourbon vanilla, the alcohol may leave an unpleasant taste in unbaked recipes.
